Ingredients:

1 cup diced cantaloupe

1 cup diced watermelon

1 cup diced seedless cucumber

4 plum tomatoes, seeded and diced

1/3 cup finely chopped red onion

2 Tablespoons Olive Lucy Persian Lime Olive Oil

2 teaspoons lime zest

2 Tablespoons chopped flat leaf parsley

2 Tablespoons Olive Lucy Jalapeno Balsamic

 

Directions:

Mix together and rest for 1 hour before serving. Use to accompany crab cakes or any grilled fish.
