On Thursday, June 1, 2017, we had nutritionist Nancy Popkin from Love More Eat Less- Holistic Wellness and Nutrition at the store to share information on healthy eating and demonstrate a great recipe for the summer. Her Avocado Pesto is, full of antioxidants, healthy fats and great flavor! It’s creamy, satisfying and will be a new go-to recipe for your summer pasta dishes.

Ingredients:

4 cloves of garlic, minced

4 avocados, shelled and pitted

2 cups fresh basil, chopped

3-4 tablespoons of your favorite extra virgin olive oil (use more oil if avocados are firm)

2 tablespoons milk of choice (or if you want 2 tablespoons of your cooked pasta water)

1 pound pasta of choice, cooked

Sea salt and pepper to taste

Directions:

Cook pasta according to directions. Drain and put in a large serving bowl.

In a blender or food processor, combine the garlic, avocados, fresh basil, Extra Virgin Olive Oil and milk (or water). Blend until well combined. Pour over cooked pasta, mix and add salt and pepper to tasted.

Serve warm or chilled.

Serves 8

An Evening With Nancy Popkin, Founder of Love More, Eat Less

Join us on Thursday, June 1, 2017 from 7:00 to 9:00 pm at Olive Lucy, for an evening with nutritionist Nancy Popkin. Nancy, founder of Love More, Eat Less, works with clients who want to make a sustainable change in their food choices and their health while eating real food. It is not about going on a short-term diet, it is about long-term success. Most of us have habits and challenges related to our family and work situation and our lifestyle. Nancy helps her clients work through those obstacles to find the foods and eating style that best suits each individual. The results are lasting improvement in weight, energy and symptoms. And there is a side benefit, which is that most clients find improvement with their personal relationships because they feel better about themselves.

Nancy has been working with clients in the Bucks and Montgomery counties for more than 10 years. She is the Nutritionist as The Solebury Club in Buckingham, PA. She also works with private clients via phone, Skype and in person. She is a contributing blogger to the Huffington Post and has been featured in other blogs and podcasts, including Massive Momentum in Minutes.

During our evening with Nancy, she will enlighten us with her knowledge on nutrition and share with us some of her favorite recipes, featuring some of our very own Olive Lucy Olive Oils and Balsamic Vinegars. Following her presentation and demonstration, you will have an opportunity to taste her creations, ask questions and partake in an extra virgin olive oil tasting.
