We love to grill at Olive Lucy! But sometimes the weather doesn't always cooperate with us. In the Olive Lucy test kitchen, we came up with a new recipe for grilled chicken that is perfect for indoor grilling! The marinade for the chicken features our Extra Virgin Olive Oil and Olive Lucy Gourmet Pantry (OLGP)¬†Organic Flippin' the Bird Seasoning. The freshness of the Extra Virgin Olive Oil and the savoriness of the seasoning with just a hint of spice give¬†the chicken a pleasing pop of grilled flavor for when you aren't able to use your outdoor grill. We sliced it and served it over a bed of couscous seasoned with our OLGP Couscous Seasoning. The flavors complimented¬†each other well.
This recipe was¬†featured at our Summer Sampler¬†cooking demonstrations and it was a hit. The guests loved it! They¬†took home the recipe and Olive Lucy¬†ingredients to try on their own. We hope you enjoy this simple and easy to make anytime¬†recipe.
4 boneless skinless chicken breasts
3 Tablespoons of Olive Lucy Extra Virgin Olive Oil
2 Tablespoons of OLGP Organic Flippin' the Bird Seasoning¬†
1 Box of Couscous - plain no seasoning
Water for the Couscous
2 Tablespoons of OLGP Couscous Seasoning¬†
Mix the Organic Flippin' the Bird Seasoning with the Olive Lucy Extra Virgin Olive Oil, pour over the chicken and let it marinate in the refrigerator for 1-2 hours.
When ready to cook the chicken, preheat a grill pan over medium heat. Make sure to take the chicken out of the fridge 20-30 minutes prior to cooking to help the meat come to room temperature which will alow it brown better. Remove the chicken from the marinade and cook two pieces at a time. Don't crowd the pan or the chicken will steam/boil instead of brown. Allow each side to cook through half way before flipping to cook the other side. This will alow the chicken to develop grill marks from the pan. When cooked through, remove and keep warm while cooking the next two pieces.¬†
While you are cooking the chicken, in a medium sauce pot, bring water to a boil and then add in the plain couscous with the Couscous Seasoning. Give it a quick stir to mix the seasonings with the couscous. Turn off the heat and let the couscous sit and steam for 5-8 minutes per the directions on the box. ¬†
When ready to serve, slice the chicken breast on the bias and place over the couscous. ¬†
